These green tea cupcakes are finally, officially, up for SALE! Mouth watering delicious, they are , I tell you. try some and believe it! :) haha

I can't believe it would be a month before all these fun (baking) will come to an end :( I'm so thankful for all the support in helping me raise funds! Man, I couldn't have done it on my own. Thanks mom for your encouragement, and being so enthusiastic in promoting the cuppies! And for my family and friends who have been very encouraging cupcake 'tasters.' =D Of course,also to all of you who have been ordering! and sharing the goodness of cupcakes! mmmhmmm...

I'll be taking my SAT exams on 6th December 2008 and CLEP the week after, thus, December 5th will be the last day for orders. So.....Hurry up and satisfy your craves, while you still can! :)

Study Study Study!

Ahh finally... I'm done with the English Assignment which I handed in right before the clock strike twelve midnight! (which was also the dead line). I don't know how long I will cope with having orders and studying at the same time. It IS really tough. But anyway, it will only be another month before I fly off to Aussie land! =D I am so looking forward to it, yet I can't believe it is so soon. There are so many things I want to do before I leave =(

To top it up, we are moving! I mean we are moving from this part of Singapore to another :) I love moving house, but not at this time! I mean, I have college entry exams in a month, and I have no idea if I can do it or not. It's really scary.

Homemade Journals

Lately, I've been making 'home made journals' . It was originally my sister's idea to start journaling everyday. I thought that was a good way of keeping track of my time, so I decided that I wanted to start journaling too! But the problem was that we did not have any note book in hand, except for some free notebooks that we received. I decorated mine with pattern paper so that it didn't look so cheap. Then my sister decided to do the same thing, and then my mom requested for one, and then my little brother and then my dad :S It was really fun though! I got to design all their note books!

This is how I did it..

Get a notebook. (It doesn't really matter if it has prints over it)

Take off the front and back cover.

Cut the pattern paper the same size as the cover.

Trace the squares with a pencil unto the back of the pattern paper.

(FYI: the finger's in the picture are not mine, they belong to my brother :)

Like this :)

Cut out the squares with a knife.

So there are now 2 pattern paper that fits right with the covers.

Stick the pattern paper unto the covers with glue tape.

It should turn out like this.

And decorate however you like.

Oh yes, remember to put back the covers to the notebook.

This is what I made for my little 10 year old brother. He picked the title for the journal, I thought it was very cute :) He wants to journal about all the birds he see. He's pretty good at spotting birds and remembering their names, color and sound. We call him 'Bird Man'.

In case you're wondering, Grace isn't my mother's name :)

She requested for that title because it is her motto for this year and the next.

And this is my journal.

It says DAY so that I remember to write everyday!

GOOEY chocolate and walnut brownies.

Wow, I never thought I'd bake two brownie recipe's in so short a time! My mom passed me this recipe that she cut out from the newspaper. Not that I like newspaper recipes actually, I just thought of giving it a go since I was bored of.... studying.. =D I remember the previous recipe that I took from the newspaper wasn't really nice. The kaya swirl cupcakes turned out more like froze-bread-like-texture... urgh..

but these turned out quite alright, to my surprise.. (guess not all recipe's from the newspaper are bad!) It's gooey and very rich! My family liked these a lot, because it wasn't too sweet :)

Try this recipe and see if it becomes your family favorite too!

Gooey chocolate and walnut brownies

200g cooking chocolate

200g butter

220g caster sugar

3 eggs

120g sifted plain flour

150g roughly chopped

1. Preheat the oven to 180 Celsius. Line a baking tray about 23cm x 23cm with baking paper, allowing the paper to come up the sides by about 4cm.

2. Melt butter and chocolate together, stirring all the time until mixture is smooth and shiny.

3. Stir the sugar into the chocolate mixture until it is dissolved, then allow the mixture to cool until tepid.

4. Beat eggs together in a separate bowl then add a little at a time to the chocolate mixture beating well as the eggs are added.

5. Gently stir in the walnuts then carefully fold in the sifted flour. Take care not to over mix.

6. Spread the mixture into the baking tin and bake in the oven for around 15 to 20 minutes.

Here is the key to getting a nice gooey brownie:

Remove from the oven when the top is firm to the touch
The brownie mixture will appear slightly softer in the middle than around the edges.
Test with a skewer. If it has cake mixture stuck to it, then put it back in the oven for another 3 minutes. If you see only a slight gooey texture though, it means it is done.
Cool the brownie in the baking tin for awhile before cutting, then cool the pieces completely on a rack.

BROWNIES!!

Yeah, this is my kinda recipe!

I was pretty disappointed by the outcome of the brownie though.

I had to bake it for an extra 20 minutes, but it still seemed to be too moist. Maybe some water slipped in when I double boiled the butter and chocolate?.. But how can it be?

This is my second try at this, hmm.. maybe it's just the recipe..

I'll try a different recipe next time!

After the frosting, it looked a little better..

I added extra walnuts for a bit of crunch, though i wished it turned out better! hah.

Thank God! I'm feeling much better now, after having a really bad headache.

Oh yeah, I finally made those cupcake pops that I was so eager to experiment!

Though my candy melts did not melt! ARGH.. prolly because I bought it on a sale, and it was not in really good condition. I'm a little disappointed how the bakery could still sell it though..

Another excuse for another batch of cupcake pops! haha

This is what I have been eating,three days in a row...

I know.. I know.. this picture makes you think its shortbread!

I thought strawberry jam with whipped cream will not give me enough health benefits :S LOL

So I used strawberry jam and - what's-better-than - fresh strawberry?

I decided that I wouldn't let the recipe restrict me from being creative..

so I made some with peanut butter chips, chocolate chips, cinnamon, berries, and nutella!

They turned out to be more delicious than I thought, seriously.

Well, maybe you should try some for yourself, these are really simple to make :)

Here is the recipe:

hint: don't make them plain! haha

450 gram self raising flour

2 rounded teaspoon baking powder

75 gram butter at room temperature

50 gram fine sugar

2 eggs

about 225 ml milk

Lightly grease two baking trays and preheat oven to 220 Celsius.
Sieve flour and baking powder in a large bowl
Chop butter and mix into flour mixture
Stir in sugar
In a separate bowl, beat eggs and stir in milk
Put aside two teaspoons of milk mixture for glazing the scones later
Slowly, add milk mixture into dry ingredients
Stir till a soft dough is formed and a little sticky (but not too sticky till it sticks to your hand)
Turn dough onto a lightly floured surface and flatten with a rolling pin to a thickness of 1-2 cm
Put some flour on a cookie cutter and cut scones.
Arrange scones on greased tray and brush tops with reserved milk mixture.
Bake for 10-15 minutes till golden brown

..mmhmmmm..

***Shhhhh.. secret!

Guess what? I make my own self raising flour!

As a student, I try to be thrift in any possible way I can.

So one way of saving money is not doing it the easy way! hahaha

This is how you make your own self raising flour:

1 cup flour

1 1/2 teaspoon baking powder

1/2 teaspoon salt

(you may reduce the salt if you are making more than one cup of self raising flour)

So I made a Creamy dark CHOCOLATE coated CHOCOLATE cake,with CHOCOLATE butter cream layer!

I think its CHOCOLATE ENOUGH!! :)

These were so extremely simple and easy to make! At least easier than I thought, as the frosting need not be even at all! (the hardest thing ever is to make them so prim and proper, and these cutie frostings need the opposite result! =D)

Though, I did 'em so spontaneously for an order that I had totally forgotten to get some cocktail umbrellas and sand for the beach :( Now it looks more like bears floating and swimming in an ocean! Never mind, now I have an excuse to make summore! yay!

I also have a feeling that these adorable bears need to see, smile and laugh too:( A gourmet writer will probably do the job next time.

Next up, I wanna make cake pops? candy pops? cupcake pops? whatever you call it :)

I had some left over plain, huge, and boiled potatoes the other day, and we didn't know what to do with it. It was pretty un-cook and the texture was hard, not good for mash potatoes.. Then I remembered that we made our very own potato recipe a few years ago, and it has always been our family favorite! I decided to revive it, trying to remember the recipe that we never bothered to write down. It was too easyy! Its healthy, and great for a quick meal.

.do anything you want with it.

6 large boiled, almost done potatoes

1 large onion sliced into one inch stripes

2 medium size diced tomatoes

5 sliced white button mushroom

1/2 cup cheddar/mozzarella

mixed herbs

Place boiled potatoes on a plate lined with foil. Spread out onions, tomatoes, and mushroom evenly on each potato. Sprinkle with cheese and a few dash of mixed herbs. Grill for 20 minutes or until cheese turns golden brown. Enjoy=D

Today, I chanced upon a blog site . And oh my!! The cakes looks just like real stuff! So perfect, such detailed work of art. To my absolute surprise, she's got a book too! Confetti Cakes Cookbook by Elissa Strauss. And I'm so gonna buy it, if only I had the money:(:( It'll definitely be worth the wait though! =D Hopefully, some kind hearted people who goes to my 'dreamland' US, would get one for me. What were you thinking, I'll pay them back of course! Prolly with some tips too!

P/S: My dad was asking if the hand bag was real (in the picture), not till he saw the lil piece of cake beside it. HAHA. Maybe he thought I was up to buying a new bag... But no, its edible!

Banana Chocolate Chip Cookies!

These mouth watering cookies are so delicious! That's why it's mouth watering cookies!!!!

Err... Okayy..So I decided that I would be generous and share this recipe with you!

Wheeeeeee!! HAHA. I found this recipe in the web somewhere, and decided I should try it,

cos banana's here are plentiful!

I'm glad.

(I made a few slight changes- in bold)

115 gram butter (room temperature, soft)

2 1/2 cup plain flour (sifted) - i used wheat flour

1/2 teaspoon baking powder (sifted with flour)

1 over ripe banana (mashed)

1/3 cup superfine sugar - I omitted both the sugar and used 2/3 cup of light brown sugar instead

1/3 cup dark brown sugar

1 egg lightly beaten

1/2 teaspoon vanilla extract

1/2 cup milk chocolate chips** (can be replaced with dark choc chip) - i used semi sweet hershey chocolate bits.

some ground nutmeg- i skipped this, but you can add a dash of cinnamon for a change:)

Note: *Dearest Chocolate lover's, add more if you want! *hint*

1. Preheat oven to 190 Celsius or 375 Fahrenheit.

2. Beat butter, sugars till soft and fluffy.

3. Add beaten egg and whisk till combined.

4. Stir in mashed banana and vanilla extract till well blended.

5. Stir in sifted flour and baking powder.

6. Add chocolate chips into the mixture.

7. Drop spoons full on to the baking sheet. (The batter turns out like a dough, so you can shape it anyhow you like, even with cookie cutters.)

8. Bake in preheated oven for about 15 minutes. Transfer to wire rack and let it cool before storing in airtight containers.

Craving for Chocolate?

Last monday, my brother and I had a great feast at the Tatsuya Japanese Restaurant, Park Hotel Orchard- our (very) belated birthday lunch. It was a real challenge eating almost everything raw!! I wonder if I will ever be able to adapt with Japanese 'eating' culture. Paul had a hard time swallowing down the slimy fishes, it was hilarious! And I'm not sure if I'll learn to like it anytime soon. We were very blessed to have our much wanted lunch with our family friend- Uncle W. He's Malaysian, but he speaks Japanese, and looks like one too! He was our life saver, explaining to us everything on the table (or we'd be eating unknown food):) Dad kinda slit a hole in his pocket when the bill came! HAHA (Thanks dad, so muchh!) Then we went to Takashimaya to get some freshly made chocolate. Paul and I had some chocolate for our birthday present!

Mmmmm.. so creamy and rich. You'd always crave for more, even when it's gone!

Have you ever thought of having chocolate with potato chips? I never thought this existed. Salty and sweet. Was not bad after all.

I never thought I was capable of committing such careless mistakes. To such extent of leaving my ruby necklace in the shower room(clubhouse) !! W-O-W, you might say.. I still cannot believe it! It was a gift from mom and dad, and also a blessing from our family friend. But to my utter amazement, it was found and returned by a very sincere neighbor. Boy, such great temptations, who can resist? I could not thank her enough, but I tried my best making this cupcake:

3 hours of rolling and shaping these roses. (my first attempt with fondant). Every minute was worth the while! definitely. Phew....
